Dragon Fruit Smoothie

Try this nutritious Dragon fruit smoothie packed with antioxidants.

Ingredients

  • 1 Medium Beetroot, raw

  • 1 Red Dragon fruit

  • 2 frozen Bananas

  • 1 handful of Spinach or Kale

  • 1 tsp fresh Ginger root

  • 1 tbsp Chia seeds

  • 2 cups water or cashew milk

  • Desiccated coconut for sprinkling (optional)

  • Pinch of cinnamon and/or vanilla (optional)

  • 1-2 cups ice (optional)

Instructions

  • Soak Chia seeds in water for at least 10 minutes.

  • Add all ingredients to a blender and blend until creamy and smooth, adding more water/cashew milk to thin, or add ice to thicken.

  • Serve and enjoy! Best when fresh, though leftovers keep covered in the refrigerator for 1-2 days.
