Dragon Fruit Smoothie
Try this nutritious Dragon fruit smoothie packed with antioxidants.
Ingredients
1 Medium Beetroot, raw
1 Red Dragon fruit
2 frozen Bananas
1 handful of Spinach or Kale
1 tsp fresh Ginger root
1 tbsp Chia seeds
2 cups water or cashew milk
Desiccated coconut for sprinkling (optional)
Pinch of cinnamon and/or vanilla (optional)
1-2 cups ice (optional)
Instructions
Soak Chia seeds in water for at least 10 minutes.
Add all ingredients to a blender and blend until creamy and smooth, adding more water/cashew milk to thin, or add ice to thicken.
Serve and enjoy! Best when fresh, though leftovers keep covered in the refrigerator for 1-2 days.
